There are two ingredients that we can’t live without when it comes to breakfast: fresh, local veggies and bacon. Throw those two together in a quiche and we’re in heaven, which is why our hearts skipped a beat when we stumbled upon this irresistible Pinterest recipe for an Asparagus Swiss Quiche studded with bacon. The recipe is simple, calling for just ten ingredients and a few easy steps. What’s more you’ll enjoy the sweet smell of bacon wafting through the house. Asparagus is the other star of this dish, and with our local farmers markets returning for the season, it’s the perfect time of year to grab a bundle of asparagus spears. We love combining fresh, local flavors in our kitchen at the Combsberry Inn. We’re confident that once you tuck into this winning quiche, you’ll add this to your list of go-to breakfast recipes. What You’ll Need:

10 bacon strips, diced

½ cup of chopped onion (feel free to chop pieces to a size of your liking. We prefer large chunks but we’ve also had guests who prefer tinier pieces).

1 pound of fresh asparagus, trimmed

1 cup of shredded Swiss cheese (not a fan of Swiss? Try provolone or cheddar!)

1 tablespoon of all-purpose flour

¼ teaspoon salt

⅛ teaspoon pepper

1 unbaked pastry shell (9-inches)

3 large eggs

½ cup half-and-half cream

Directions:

  1. Did we mention how much we love bacon?? Well, we’ll start with the bacon then. In a skillet, cook your bacon over medium heat until you’ve reached your desired crispiness. We prefer extra crispy at the Inn, but that’s entirely up to you! Remove bacon with a slotted spoon and place on a paper towel. Reserve 1 tablespoon of drippings and use it to sauté the onions until brown. Drain.
  2. Cut eight of your asparagus spears into 4-inch pieces for a garnish. Take the remaining asparagus spears and cut them into smaller, 1-inch pieces. In a saucepan, cook all of the asparagus in a small amount of boiling water until crisp-tender. Drain.
  3. In a medium bowl, combine the smaller asparagus pieces, onion, bacon, cheese, flour, salt and pepper. Pour into the pastry shell. In a small bowl, beat three eggs and cream. Pour over the bacon mixture in the pastry shell. Place the 4-inch asparagus spears in a layer on top. Bake at 400 degrees for 30-35 minutes or until the crust is golden brown.

Tip: Serve with a pitcher of freshly-squeezed orange juice (or add some champagne for mimosas) and enjoy! The Asparagus Swiss Quiche serves 6 to 8 people, which makes it a perfect dish for entertaining guests.
